René Redzepi, the head chef and co-founder of Noma, announced Wednesday that he will step down from his role at the renowned Copenhagen restaurant. His decision follows serious allegations that he physically mistreated members of his staff.
Noma ranks among the most celebrated restaurants in the world and has attracted global attention for its innovative cooking style. Redzepi led the kitchen for years and built a strong reputation in the international food scene.
The chef shared the news of his resignation through a message posted online.
“I’ve decided to step away and allow our extraordinary leaders to now guide the restaurant into its next chapter,” he wrote in an Instagram story.
Serious claims about treatment of employees
The resignation comes after a detailed report revealed disturbing accusations from former employees. The investigation included interviews with 35 people who once worked at the restaurant.
Several former staff members described incidents of physical and psychological mistreatment inside the kitchen. According to the report, Redzepi allegedly “punched employees in the face, jabbed them with kitchen implements and slammed them against walls”.
The same report also described a long pattern of intimidation and humiliation in the workplace. Former workers said they experienced body-shaming remarks and public ridicule.
Some employees also claimed they felt threatened. The report stated that Redzepi warned staff that he could damage their careers by getting them blacklisted in the industry. Other threats reportedly involved immigration issues and even pressure involving family members’ jobs.
These claims sparked widespread concern in the restaurant industry.
Chef acknowledges past leadership issues
In his message, Redzepi addressed the controversy and admitted that recent discussions forced him to reflect on his past leadership.
He said the past few weeks had “brought attention and important conversations about our restaurant, industry and my past leadership”.
Redzepi added that he had tried to improve his approach over time.
“I have worked to be a better leader and Noma has taken big steps to transform the culture over many years. I recognize these changes do not repair the past. An apology is not enough; I take responsibility for my own actions.”
The chef also released a video in which he apologized to members of his team and confirmed that he would leave his role.
Industry reaction and business fallout
The allegations emerged just as Noma prepared for a temporary restaurant project in Los Angeles. The pop-up dining experience will run for four months.
The controversy has already had financial effects. American Express and hospitality company Blackbird recently ended their partnerships with the restaurant ahead of the Los Angeles launch.
Despite the controversy, demand for the event remains extremely high. Tickets for the pop-up dinner cost about $1,500 each and sold out in just three minutes.
Redzepi said the restaurant team will continue with the Los Angeles project.
He wrote that Noma’s staff will “carry forward together into our LA residency, which will be a powerful moment for them to show that they’ve been working toward”.
Stepping down from food organization
Redzepi also announced another major decision connected to the controversy. He confirmed that he will resign from the board of Mad, a non-profit organization in the food industry that he founded in 2011.
As the situation continues to draw global attention, Noma now prepares to move forward under new leadership while the restaurant world watches closely.
